Whenever I’ve been on Pinterest lately, I’ve noticed two things: firstly, if it has the words caramel, cinnamon bun, or smores in the name of the recipe, I will Pin it in two seconds flat. I give you Exhibit A, B, and C. Secondly, there are a lot of eclair pictures and recipes floating around the Internet lately. It’s been hailed by some as the dessert of 2014, and I for one am excited about it. I’ve never loved chocolate all that much, but add in some pastry and vanilla custard, and I’m in. I added caramel and bananas to some store-bought eclairs for a quick dessert recently and they were delicious! There are so many variations out there — here are some fun links I’ve come across:

I just discovered that Cadbury makes mini eclair chocolates! If I could beam myself back to England when I visited Cadbury World a few years ago, I would certainly be picking up boatloads of those to bring home.

These raspberry eclairs from Spoon Fork Bacon look delicious – love the candies on top!

Apparently there is a place in Paris called L’Atelier de L’Eclair. I might have forgotten everything I learned in high school French class, but I do believe that translates to HOUSE OF ECLAIRS! Excuse me, I need to go book my ticket to France asap.

And lastly I am so glad I stumbled upon the recipe for this eclair cake from The Girl Who Ate Everything. It is a thing of beauty!

By the time March rolls around it’s always a little bit hard to see the beauty of winter. Ok, a lot hard. I came across some photos I took around the holidays and they reminded me of the good old days. You know, the days when you don’t feel like backing over your shovel with your car and burning your snow boots. Spring will be here soon enough…right? In the meantime, Happy Weekend — hope it’s a good one!
